Enjoyed our dinner. Great server. Steak and Prime Rib were both excellent. Nice Wine (server recommendation) and George Washington Old Fashioned for dessert.
The food was incredible. I am a very picky eater, and I had the airline chicken breasts with the bourbon glaze, while my husband had the prime rib, and we had the pretzel braid for an appetizer, with an apple dumpling for my husband to finish it off, and a slice of cheesecake for myself. Everything we had, from start to finish, was hands down amazing. The chicken was tender and the glaze had a kick, but it wasn't too overpowering. The prime rib that my husband had was juicy and very delicious; he couldn't finish all of it because it was too much. We will definitely be back here again, this time with our family!
It was nice but certain lost sale opportunities. It was nice to be able to sit and talk.
Just a great dining experience. Our server was attentive and cordial, the beer selection was impressive, and my only complaint about the menu was that there were too many delicious sounding dishes that it was hard to decide! Everything we ate was flavorful and cooked well. We’ll definitely be back.
Food was excellent, bar tender excellent and once a waitress took it upon herself to wait on our table (the assigned waiter kept walking past us) she was too notch. Host and hostess were extremely disorganized - we checked in and went to bar when our time to get a table came we checked in again and they had lost our reservation. Our table seemed to be in the way, our chairs were run into by multiple servers...very irritating especially when they looked at us like we placed the table in their way.
Had heard about this restaurant for year’s. We finally had a chance to dine at this establishment, food was average at best. My steak was just ok. We ordered desert which took about 20 minutes to bring to our table. Downtown Carlisle has many great dining options, I would suggest many others before this place.
Restaurant was overbooked, seating was delayed, and, when seated, seating was in adjoining ice cold hotel breakfast area instead of cozy restaurant with fireplace. On top of eating in my coat, the food cooled faster than it could be eaten, and our selected bottle of wine was out (one glass left). Did I mention that part way through our dinner (7:30 pm reservation), restaurant staff began streaming into room and bouncing off our chairs, to set up the next day's hotel breakfast serving items on adjoining counters? All in all, a lousy special occasion outing. This fourth trip will likely be our last, despite excellent local steaks.
Outstanding experience. Service was fantastic, she was attentive, courteous, friendly.....I could go on. Needless to say she was great. The meal was delicious. I had a prime rib that was melt in your mouth good. My wife enjoyed tenderloin tips that were just as tender the next day as when they came to the table. While the price is a little on the higher side you truly get what you pay for, service, atmosphere and delicious food with an extensive beverage selection. Do I recommend 1794 The Whiskey Rebellion? Oh yeah.
Food was phenomenal! The service was good, our waiter was a very friendly young man who made sure we had everything we could ask for. The kaesespaetzle was fantastic, it was like grown up Mac and cheese. Couldn't recommend it more!
Drinks were great, appetizers were phenomenal and entrees were great.
Food was great and waitress did her best. But management made the decision to stick us in the noisy overflow section when we had made our reservations well in advance and wanted a nice dining experience on Valentine's Day.
We had Ryan as our server, he did an excellent job. We were very satisfied with the seating, service, and food. Another good evening spent with friends.
Have dinned at 1794 several times for both business and personal occasions. Every time we have been impressed as have our guests that we brought. We have some clients that are big stake fans and they feel this is the best option in central pa and very reasonable for the quality. The stuffed mushroom appetizer is excellent, the Cesar salad is also very good. Numerous dishes have been successful, the bison burger is really good, the beef stroganoff was really good, even the chicken pie was well received.
The steak was amazing!! Service was top notch...I requested a seat by the fireplace, and even though it was their busiest day of the year, they graciously accommodated my request!
First time dining at 1794. Drinks were great and the food was delicious. Prices were reasonable for the quality of food and drinks. Service was erratic, drink orders were forgotten twice. Ambiance depends on which room you sit in. Bar was cozy, front room with fireplace had booths and tables, and I would request it next time. We were relegated to the boring hotel breakfast room, which lacked in any decor and had a rather large TV that continuously looped a commercial for the very restaurant we were sitting in! Very distracting and unnecessary. Next time, we'll eat at the bar or request the fireplace room, as it's worth a return trip for the drinks and food!

Caleb, our waiter, was incredible. His knowledge of both drink and food menus were amazing. The recommendations he provided added to our dining experience. He was polite and extremely personable. Caleb was timely with his service and was there to clean our table as it was needed. As for the food, my son got the Wagyu steak which was cooked perfectly and was tender and tasty. My wife got the Wagyu raviolis that she described as being the best she ever had, fresh and extremely tasty. I got the Shepherd's Pie that ranks as one of the best I ever tasted. The bourbon menu was amazing and the variety of cocktails was amazing. Their expertise and care in to how they make their drinks is noticeable i the taste. Highly recommend this restaurant for their food, drinks and service.
Good food, made reservations and was hoping to be in front room near fireplace, back tables a little close together. Ok service from a busy and inexperienced wait staff; overall a good dining experience.
The food was amazing, started with the Tavern Prime Mushrooms and the Whiskey Rings. They were both great. We happened to stop in on their Prime Rib night. Lucky US. Everyone in our party got the prime rib. The guys specifically said, it was the best Prime Rib they had ever had. I heard the Chef talking to another table and he is very proud of the quality of their steaks, & it is all from local farms. We have been to some high end steak houses throughout the US. This ranks right up there for the food. They do have a drink menu which is a little confusing. They have 3 signature cocktails across the top of the menu Seasonal, Rebel Yell & Springria. Our waiter was under 21 so I am not sure he understands the importance of being able to answer questions about cocktails. The Seasonal specifically says draft cocktail. The waiter said ALL their cocktails were draft, but then told someone else at our table something different. They have more cocktails than just their signature ones & I am not sure what cocktails are draft and which are not. They also have an extensive Whiskey menu. One person ordered a Woodford Whiskey flight that he could not get because they were out of the rye version. They were also out of a Japanese whiskey that another guy in our group ordered. I had the Rebel Yell, which was good, I then had a glass of wine. It just seemed easier. Everyone in our group would go back again, the FOOD was great, I just hope for a more experienced server that can provide more accurate information about the drink menu.
The Prime Rib is amazing.
Mary was our server. She did a very nice job visiting our table and not making us feel rushed. She provided input on menu choices and was very pleasant. We got to meet the chef, who took a moment to thank us for dining with them this evening. Meal was spaced out appropriately over the 2 hrs. We were there. Ambiance and temperature was great. It wasn't to loud, and at the same time we couldn't hear any other conversations from adjacent tables. Their menu items are sourced from local farms which are provided to you. We will definitely recommend and will comeback!

My husband and I enjoyed our meal, the food was excellent (great job Chef Jeff), the waiter was attentive everything was what we hoped it would be.
Wonderful food, the crab cakes were all crab-no filler. Drinks were delicious and the service was friendly and attentive. The restaurant is lovely with a beautiful fireplace. We will definitely be returning soon!

I would definitely recommend this place when staying or visiting in Carlisle. Casual and comfortable. Food was good. I had the crab cakes. They had potential to be outstanding but were drenched in butter, to the point which distracted to the abundance of lump crab meat in the cake. My wife had the airline chicken breast. Very flavorful and highly recommended. I wish I tried their steak offerings. I would go back if in the area.

Great meal, great historic venue and excellent bourbon list! Highly recommend 1794 WhiskeyRebelliin, the manager Mike along with our server Logan were great!!!! The appetizer (Deviled Eggs) main course farm raised Kobe Filet and Bourbon Glazed Chicken and Strawberry Cheesecake were delicious!! As were the bourbon cocktails ( Sazerec and Rebel Manhattan).
We look forward to returning!!!
Food was incredible! The shrimp was on point with seasoning and taste! So good. The vibe of the atmosphere wasn’t quite what we expected but overall it was pretty good!
it was my first time going to the Whiskey Rebellion. The service was efficient and our server was so informative and friendly! The food was absolutely phenomenal. I got the steak medallions, mashed potatoes and asparagus. Everything was cooked to perfection! I would definitely recommend this restaurant to anyone in the area or even just passing through.
The place was practically empty on a Saturday night which made the extremely slow/poor service difficult to understand. The food was good though;)
Found this place on google since we were going to be staying close by on a trip from out of town. Anthony was very friendly and informative. The food was delicious and hot and the drinks were superb! If ever in the area again will definitely be back!
Dinner for two-chef came out twice to ask about food-steaks perfect and desert-next time will make room for the onion rings!!
Food was amazing as usual. Our server was Laura who went above and beyond. The onion rings look like doughnuts and were amazing...my steak was cooked perfectly. Anthony the bar manager made us a new drink he created that included smoking it...was very good.
Five in the party had beef and they received generous portions. I ordered the salmon - very flavorful but probably the tiniest portion I have ever had anywhere.
Odd location inside a Comfort Suites in downtown with a Smoking Tent prominent in front of the restaurant! Place was pretty empty at 830 on a Saturday night. Service was conducted by a single overworked server who was enthusiastic but untrained. Drinks took forever although there were only two tables full. Food was surprisingly good- bison burger, stroganoff and prime rib with only the Applebees quality mashed potato and gravy falling short. Very good beer selection. OK wine selection.
We were there on a rainy night and our table in front of the fireplace was perfect! Staff was initially very attentive, but after dinner was presented our server (who was fairly young and perhaps not as experienced as the other servers who came to our aid) disappeared without asking if we would like an additional beverage. Overall, it was a pleasant evening with good menu choices.
