Originating from the bustling river docks of Chongqing in southwest China, Chongqing hot pot dates back over a century, when boatmen and workers cooked meats and vegetables in a bubbling pot of chilli, Sichuan peppercorn, and spices to stay warm and energised during long days on the Yangtze River.Today, this iconic dish is famous for its rich, spicy broth and communal style of dining, where friends gather around the pot to cook fresh meats, seafood, vegetables, and noodles together.
