Night Rooster is a modern Chinese-American fine dining restaurant in Dallas' Design District, from Hooper Hospitality Concepts (sibling to The Saint). Led by Beijing-born chef Shirley Chung—known as the "Dumpling Queen," Top Chef alum, and veteran of kitchens like Thomas Keller and José Andrés—it opened in January 2026 as her Texas debut and personal comeback after overcoming tongue cancer. Inspired by a Chinese folktale of perseverance (a rooster's crow bringing back the light after darkness), the moody, seductive space features shareable elevated dishes like tea-smoked duck, sweet & sour branzino, lobster-shrimp air eggrolls, and creative dim sum, blending Chinese heritage with Texas ingredients and warm hospitality.
