Gediegen, mit einer ambitionierten Kulinarik, die auch traditionelle Gerichte aus der Vergangenheit modern wiederbelebt.“ Etwa „Himmel und Erd“, bei der das eingespielte Köche-Team Ansgar Wölfel und Georg Czaya die knusprig-zart gebratene Traunsteiner Blutwurst auf cremigem Kartoffelpüree bettet und mit gerösteten Zwiebeln und Apfel-Verjus umgibt. Oder „Des Königs Leberwurststulle“, die mit Entenleberparfait auf Brioche, Portweingel und Cornichons zelebriert wird. Serviert wird auf Vintage-Blümchengeschirr, ein wichtiges Detail, da es bewusst nostalgische Gefühle wecken soll und zu den weiß eingedeckten Tischen und der dunklen Holzvertäfelung gemütlich und äußerst stimmig wirkt – und auch Landhuhn oder Loup de Mer, Tarte Tatin und (Safran-) Birne Helene ein geschmackvolles Zuhause auf Zeit gibt.
