Copacabanaでの食事は「Galleria」から始まります。オープンコンセプトのベーカリーでは焼きたてのパンや丸型の大きなチーズを切り分けたもの、巧妙にスライスされた選りすぐりのハムやソーセージなどが楽しめます。シャキッとしたサラダ、さまざまな前菜を好きなだけ食べられます。ただ、食事はまだ序盤ですからお腹に余裕を残すようにしてください。 テーブルでは店のガウチョあるいは肉を切り分ける担当のスタッフが、あらゆる手法で調理したさまざまなサーティファイド・アンガス・ビーフ（CAB）を切り分けてくれます。肉の切り分け担当者にお好みの焼き加減（大半はミディアムレア）を伝えれば、あとはすべてお任せです！ ひとつだけ、お願いしたいことがあります。ガウチョはテーブルで肉をカットします。ガウチョが肉を完璧な薄いスライスにカットする際、あらかじめテーブルにセットされたトングでカットされる肉の上部をつまんでガウチョをサポートしてください。切り分けられたらあとは食べるだけです。お好きなだけどうぞ！
