At Carbon Mexican Woodfire, we celebrate the spirit of fire, flavour and community. Our kitchen uses traditional parrilla techniques to bring wood-fired energy to Mexican classics, charcoal-sealing meats, seafood and tortillas to create dishes that carry bold, smoky depth. Our menu encourages sharing — from “Para Compartir” starters like fresh oysters and guacamole, to tacos filled with barbacoa ribs or wagyu steak, and our wood-fired steaks including MB2+ rump and MB3+ sirloin. We pair every dish with a drinks list full of margaritas, mezcal, tequila cocktails, local wines and craft beers. We designed the space to feel warm and vibrant: low lighting, rustic finishes and the scent of mesquite in the air. From intimate dinners to lively gatherings, Carbon is about sharing food, drink and connection in a spirited, wood-smoke ambience.
