Service has to be better and friendlier
A very stylish Peruvian restaurant with Japanese fusion. The service is excellent and the chicha morada (a Peruvian mocktail) is the best! Certainly ask for recommendation from the servers!
Not $$, small “sharing” plates were super expensive 35-45$ and the smallest cocktails for $17

The service was very poor, server forgot about us, he had to get up to order everything.

All of the food came out at the same time and certain dishes that were supposed to be hot came out cold. Not impressed and completely over priced for the quality and portion sizes.

GREAT FOOD! Super nice waitress. Really good food, it’s light, it’s acidic, it’s pack of flavor. Just a really awesome restaurant that is underrated. Their price is really fair and quality is not far from top restaurants like Nobu. Definitely check it out
The flavors in the Japanese/Peruvian cuisine were excellent. One chicken dish was dry and had to be returned. The fennel salad was excellent, the ribs were tasty but a little dry. Lamb chops were excellent flavorful and perfectly cooked. The service was helpful and attentive.
Exited to bring my Peruvian boyfriend here since he loves Lomo! We ordered the Lomo saltado & Yuquitas. I am a cheese lover so I really enjoyed the Yuquitas. They came out hot with the green sauces on top. The Lomo was definitely a minimalistic approach. The steak was so tender and flavorful with a lot of juice and 3 pieces of fried yuka fires on top. The rice came in a separate bowl so very flavorful on its own. The rice soaked up most of the sauce and was delicious. The one and only thing to make this dish better would be more fries! 3 pieces is kinda silly and should have a lot for for the price. Not sure if I would return but good experience.
Superb all the way! Located in an awkward area of Vegas but once you get in the restaurant it’s amazing. Bravo to the staff. Professionnel, not pretentious, just perfectly friendly enough to have a little chat with them. The staff is guiding you through the menu nicely. No hard selling here compare to other places. AND the food! OMG! I will certainly have diner at their Beverly Hills restaurant! We are use to great restaurants and I must the best meal this year.
Exceptional food, cocktails and service. Our server was Carlos and took great care of us. We weren’t too hunger so we are light but what we had was excellent. We shared the small baked Alaska, it was delicious and more than enough for 2 people.
I really enjoyed the interesting combinations in the dishes. The music and decor added to the South American feel of the place. You forgot you were in a large casino/hotel. Only negative was the friendly service as I had to chase up one of my dishes. Would definitely go again.
The food was delicious, specially the yuquitas. We also had a ceviche that was very very good. Service was overall good, but not outstanding. We went on a Tuesday afternoon, and it was very calm.

The salad with avocado was fantastic combination of flavors without too much dressing. The chicken half was extraordinary and hit the spot. The service was top notch as well.
The Pisco sour was an excellent choice. First time for a Peruvian pisco, since we have only had Chilean piscos before, but this was excellent!

We had a lovely experience on our anniversary trip to Vegas. We tried everything our waiter recommended and were in heaven. The chef’s special salmon and beet sashimi, yuquitas, and lomo saltado were divine. Lovely experience.
TLDR: great food, 50/50 chance of good service
First time we came to Once, we had a great experience at the ceviche bar. The chef was extremely friendly. We had ordered a good amount of food for two guys, so naturally we were well taken care of. This time, we were lucky if we could get the attention of our server. We overheard the guy telling his manager that he had somewhere else he had to be. If that were the case, we would have preferred to have had another server help us out.
Food was still awesome, and the drinks were strong. The food is a saving grace, but very obvious portion size reduction from when we went they first opened last year.
We were graciously greeted, taken to our table and then felt forgotten. We watched as servers talked among themselves at the wait stations, waited on other tables, but we were never greeted for 10 minutes. My husband went to the bar to order our drinks for us and the bartender said she'd bring them to our table. While he was at the bar, I was still not greeted. The bartender must have said something because the manager came over to apologize for our wait and generously picked up the tab for our drinks. When our waitress, who we observed as being one of the minglers at the wait station, finally came to our table, she was at least knowledgeable and described the dishes well enough to help us decide which plates we would like to try. It is tapas style so the food comes out whenever it is ready and we were ready for that. The dishes were beautifully presented, the stand outs being the beef heart and the camarones (grilled shrimp). I had read the reviews and was pre-warned about the bad service. We thought maybe this night would be a good night but it proved to be what everyone before us had experienced. Thank you for bringing a new flavor to Vegas but I don't think we will seeking out another visit. The food was good but did not make up for the less than attentive service. Once will only be visited by us ONCE.

Big restaurant, no customers made for a very quiet dinner.
My wife and I shared 5 different plates. The stuffed yucca, avacado toast and the beef heart were the standouts. Also had the grilled fennal and it was good. We had differing opinions on the Octopus. I really enjoyed it but my wife just thought it was fair. All and all a very good meal and I would reccomend Once.
The meal and service - phenomenal! The food was amazing, including a special Hamachi Cheek dish (add to regular menu please!). Cocktails were also spectacular, and the server we had was amazing. This is on Eaters Essential guide for good reason!

The food was mediocre for us and so it just wasn’t worth the cost of it. You might at well go to Grimaldi’s next door and save some of your money and eat tastier food.
My (4) friends and I are local Las Vegans. We are always looking for interesting new dining experiences. Had it not been for their participation in the annual Las Vegas Restaurant Week event, it is unlikely that I would have discovered 'Once'. Restaurants serving Peruvian food are hard to find in LV. Peruvian/ Japanese fusion-impossible. When I saw that I passed the word to my friends. We went on 7/5 with the intention of having the Restaurant Week Menu. In addition we shared just about every small plate offered on the Happy Hour menu...and several of the drinks as well. All were wonderful!
1) Where the evening fell down for me was when my friends all received their entrees and I waited and waited for mine. Finally, when the others were almost finished their food our server came by and I asked where mine was. Clearly someone messed up. To make amends we were quickly brought 2 more of the HH small plates. My Lomo Saltado finally arrived - lukewarm. The rice that was to accompany it had already been delivered when the others got their food, so was cold. Also, I had asked for my beef to be cooked rare. It was not. I ended up taking it home. I did enjoy it-hot-the next day. My check alone that night was for $99.44. I believe that my friends spent similar amounts, so our table (#15/1) generated $500.00 +/-.
2) The above $$ being the case, it came as a very unpleasant surprise to me to discover the next morning that OT deemed me a 'No Show' at 'Once' the night before. OT fixed it immediately. Just did not leave a good impression.
Was not a fan of the food. Ceviche was too creamy and the lomo saltado hardly had any flavor similar to the ceviche.
Underwhelming and sodium overload... overpriced for mediocre food. Would not return. Waitress was fantastic, though.

We came in for the Dine Out Vegas special so we could try something new at a 'not so crazy price' but at the end of the day the value just didn't seem to be there for us. Cocktails are $17+ which is just downright ridiculous and the beers were $10, again, ridiculous. The apps were tiny but I will say the Red Snapper ceviche was the best thing we had! Unfortunately it was just two small bites. The main dishes were a decent size which was a welcomed surprise. At the end of the day, our $50 per person 'deal' of a dinner, after two drinks and a tip was $195. We felt like it was worth about half that price.
Portions small and expensive.
The Lomo Saltado was one of the best dishes I've ever had. Everything tasted wonderful, some amazing combinations of flavors, and the service was impeccable. They had to push us back a day because they were closed for a private event the night of our reservation, but comped us an appetizer and accommodated everything we needed and were just wonderful. Cocktails were amazing as well, especially the Nippon Cobbler.
First time there and I’d go back .

Food arrived before our Pisco Sour. Service was slow and unattended, had to stand up to search for someone that could go to our table and offer service.
No care, no love for the customer.
Staff needs training for basic service and chefs need training and learning on how to prepare real Peruvian food.
