Vodka is different from other spirits because it is pure with nothing added to mask the natural flavor. To create the best vodka, the finest grains and water must be used to impart a subtle, intriguing flavor. For Smugglers' Notch Vodka, the grains are sourced from Idaho, where the combination of light alluvial soil, cool nights, warm days, and snowmelt water creates a spectacular growing environment. The water for blending emanates from the Mount Mansfield watershed in northern Vermont. The process begins with cooking the grains to break down the starches to sugars. Next, the material is transferred into a state-of-the-art fermenter maintained at optimal temperature to ensure the highest quality wash. After fermentation, the wash enters a custom four column continuous distillation still operated by a master distiller. Following distillation, the vodka and Vermont spring water used for rectifying go through a multi-stage filtration process before they are blended to proofing specifications. The vodka is now ready to be hand bottled. Our selection of raw materials, recipe, technology, and process controls allows us to produce a product of unparalleled quality with a hint of sweetness and smoothness found only in Smugglers' Notch Vodka.
Smugglers' Notch Distillery is achieving an ambition to support treatments for cancer in an ongoing way, bottle by bottle. The decision to make the commitment to create a certified gluten free organic spirit was not entered into lightly. Obtaining organic certification as well as creating and processing a gluten free product can be overwhelming. Although the distilling process technically removes the gluten from spirits made with wheat or other grains containing gluten, new equipment was purchased solely to produce this new spirit ensuring no cross contamination from any of their other spirits. Blend No. 802 is a premium 88-proof true distilled gin hand-crafted in small batches. Reviewed in the November issue of Food and Wine magazine in a select group of "favorite new small-batch gins from around the U.S. dubbed part of an American Gin Renaissance," Blend No. 802 evolved through over 75 different trial renditions created by co-owner distiller Jeremy Elliott and final selection by a crowdsourcing effort that called on the taste buds of over 200 Vermonters from around the state. Launched October 30, 2015, Litigation is crafted from a special blend of wheat and malted barley, is aged in new Char #4 white oak barrels, and tamed from its barrel strength to 92 proof to create a delicate, yet flavorfully balanced spirit, perfect for sipping. On the nose are subtle hints of butterscotch, caramel, vanilla, and a slight woody scent. A sip will reveal a smooth well-balanced bright taste that envelops but does not linger. It is truly a remarkable spirit.
Our award-winning, premium single-barrel extra aged amber rum offers an intriguing flavor profile. Aged for 3 years in charred white oak barrels, the process is finished off with double-aging in 4 year-old whiskey barrels to infuse complex whiskey overtones. Each barrel offers a subtly distinct flavor profile, a rum connoisseur's delight! Our rum is stored in a heated warehouse (think warm climate) unlike whiskey, which requires cooler settings for aging. The heat causes some reactions to speed up. One of these is esterfication. Esterfication, a chemical reaction between an alcohol and an organic acid that is affected by time, temperature, and the components present, is an important process in developing the flavor profile of our rum. The lignin material of the oak barrels also contributes flavor components. Most of our rum color develops during the first year and steadily increases during the maturation process. Alternatively, rum esters form at a steady rate through maturation, melding the singular aromas and flavors unique to each barrel of rum. This amber colored aged rum has an elaborate aroma with strong bourbon and oaky components. At first sip these full bodied tones stand out, and layered flavors of vanilla, toffee, honey, and sweet spice warm the palate at the finish.

Maple Rum is made with Vermont spring water and molasses and is aged 3 years in charred white oak barrels, 2 years in Smugglers' Notch Distillery bourbon barrels, and 1 year in our 100% pure Vermont maple syrup bourbon barrels. Our unique rum has a delicate maple nose, complex whiskey overtones, and a sweet/smooth finish.
Our Straight Bourbon Whiskey is formulated through purposefully sourcing the finest distillate, careful aging and exacting blending of the distinctive flavors of corn, rye, and malted barley. For a whiskey to call itself bourbon, its mash, the mixture of grains from which the product is distilled, must contain at least 51% corn. (The rest of our mash is filled out with malted barley and rye.) The mash is distilled at 160 proof or less, and then aged in new charred American oak barrels at 125 proof or less. The art and delight of creating fine blended bourbon inspires us as we create SND's exceptional flavor profile. We carefully choose particular mash bills and blends and age them in our northern Vermont facility using various sized and constructed barrels from several cooperages around the country. Only after a rigorous blending and tasting process is our bourbon ready to be proofed with pure Vermont spring water. At 90 proof, this bourbon is exceptionally smooth with an aroma of sweet corn and nutty rye. Angostura bitters pairs well with maple, and is wonderfully seasonal. Ingredients: 2 oz. Smugglers' Notch Maple Bourbon, 1 dash Angostura Bitters, 1 tsp sugar super fine, 1 orange twist for garnish. Instructions: Combine all ingredients in a mixing glass, add ice, stir about 45 times, strain into a double old fashioned glass with one large ice cube, garnish with a wide orange twist. Make sure to squeeze the twist over the the cocktail with the skin facing down, coating the top of the cocktail with the aromatic oils, then rub the skin on the rim of the glass. Drop the twist into the cocktail and serve.
