   Food was amaIng, selection good. The ambiance was great. The place was beautiful. The service was a little slow and seemed to be disorganized. We got there right as it opened so there were not many people and it still seemed like the servers were disorganized. It has only been opened a couple of weeks so maybe they were just getting the kinks out. Price was about right for that kind of a restaurant.

   The lamb pot pie was delicious just lacked cooked vegetables. Rib eye steak was flavorful but chewy/ tough. We would definitely return, cheerful staff, friendly but a little slow getting drinks to table.

   Service was ok but took a very long time to get drinks to start. Being the first time there I went for the burger. It was very dry and the meat lacked flavor and was undercooked almost rare, but I ordered Medium. Absolute no juice in the meat at all. The service was good just a bit slow.

   We had dinner on 5-5-25. The parking lot appeared to be packed to I was thankful we had a reservation. We were greeted as we entered and the immediately seated in a very nice corner booth. We were easily able to enjoy the environment and conversation with a nice view both inside the building and outside the window. The servers were attentive, friendly and did a good job from the hostess to the table setting & clearing, taking our orders and serving our meals. The owner recognized my mom and came to say thank you for coming. Our food was top notch. We had the baked Brie appetizer and bread service. We choose 4 different entrees and 2 desserts. Since we were celebrating my dad’s birthday we also had a fun birthday candle included!! Overall a great experience. As the owner said, they are still learning and settling in but they are off to a great start. Thank you!!

   Our first time. Food was outstanding! Staff is so friendly and professional. As a former restaurant owner of Montana Cafe, I give it 5 stars. We will be back.

   Fantastic food and atmosphere. You won't find better food in the entire valley. The restaurant is classic Montana. Whether it's a date night, a special occasion, or just a nice night out with friends or family, The Sapphire will not disappoint. This will soon be the destination restaurant in the Bitterroot Valley.

   By far the best in Darby. Sophistcated ambiance.friendly atmosphere. Outstanding food. Well thought out. Staff is still learning. Confused activity. Too many, but they are still in training. Too many little plates. Bread with oils should have minimum plates. Noticed other tables felt the same. Staff very friendly.

   We found the overall experience very pleasurable. The wait staff, the bartenders, hostess, were all polite and attentive to making sure we were taken care of. Our meals were very good. Portions are large very good. We enjoyed our evening there and will certainly plan to go back.

    Right when we walked in the door we were greeted with a smile and were helped right away. The service was great as well as the food. The prices were great as well. Our friend had the pork chop which he said was the best he’d ever had. I had the tenderloin that was cooked to perfection. My husband had the ribeye which he asked for medium rare but came out rare but he said it was still delicious. The mussels for an appetizer were delicious as was the baked Brie. The iceberg wedge was definitely another hit. The stacked cheesecake for dessert was delightful. This restaurant will be our go to for sure!!
