I called ahead to see if there was an option to have the brunch Buffet or order off of a menu. I was told that both were an option, but when we arrived I found that brunch was the only option. That was disappointing because I cannot possibly eat $58 worth of food.
The art deco interior it was lovely, very great Gatsby.

Went to the Vermillion room for Sunday brunch during our stay in Banff. Service was excellent and food was high quality. For the price I expected slightly more selection and a longer buffet table. We got a seat by the window which really made the experience. We felt the price was slightly high, especially as our lattes were extra.
We enjoyed a great dinner at the Vermillion for our last night of our honeymoon. We had a nice view of the mountains to enjoy for our dinner, the food was delicious and our server Christian was very friendly and helpful.
The T-bone was done to perfection. Best I’ve had in years. Excellent!
Visited for thanksgiving dinner and everything was perfect-especially they’re squash soup!
Had the Thanksgiving dinner and found the turkey to be very dry. The meal appeared to have been prepared and plated earlier in the day and put under a warming light which made the meal very dry and tasteless. As a family we were disappointed in the quality of the turkey dinner we received.
Can not ever do wrong dining here. The food is sooooo good!

Fantastic experience !
Went there during the Thanksgiving weekend and as usual, they had a great setup of food there. The service was exceptional and even though their hot chocolate machine was not working properly, the server went out of her way to get the kitchen to make one for us.
Even though they had a great offering there, I think I would rather have been there on a regular brunch weekend as they would have had prime rib beef instead of the turkey and ham they were serving. I didn't think it was worth the additional cost just for Thanksgiving.
I also wish they could have sat us with a view of the mountains instead of back in the corner, as my guest had never been there before. I did ask about a seat there when I made my reservation, guess they just don't try as they didn't even comment about it.

Outstanding. The burgers, oysters, short ribs, French onion soup and desserts were fantastic. I can’t wait to go back to try more.

The ambiance in the restaurant is closer to a cafeteria than a fine dining. No table cloths plastic candles.
Ordered the prime rib. Was not that tender and not properly cooked . Purried potatoes only warm . For a $60 plate . No bread

Le brunch au Fairmont était très bon. Tous les plats étaient bons, peut être léger bémol sur les desserts mais nous avons tout apprécié ! Le seul « hic » serait le rapport qualité/prix. 60$ pour un brunch, c’est quand même cher.
I used to love going to vermilion room, but it’s not quite worth it anymore.
The line to get food was horrendous and not managed at all. About a 20-30 minute wait each time to get a new plate. There are far less choices in food and much cheaper food options that I could buy at the grocery store and cook up for a couple bucks a piece. The food portions cut and given to you (beef, salmon, etc) were also much smaller than in previous years. Almost rationed.
When I booked the reservation it was around $52-$54 dollars per person and yet it went up to $58 per person when we were there. It’s definitely not worth $60 per person.
The tools are still shared to pick up your food yourself amongst other guests. But sanitizer is not readily available to use before you eat. (I did over hear someone else complain about this and she was told they were changed out every 20 minutes, but the point was that there was nothing to sanitize your hands before you eat)
The service by our waitress was excellent and completely on point. I have zero complaints about that.
It’s just the overall experience and food it’s the worth the price you pay anymore.
In the mountains on weekend
I described the Vermillion room as “good, not great”. Our server wasn’t very attentive and couldn’t describe some questions on the menu we had. I had the gnocchi and it was good but I’ve had better. My husband ordered the vermillion burger and upgraded to truffles fries which were also good but again we’ve had better. Overall good but probably overpriced
We were staying at the Fairmont Banff Springs for our Anniversary and decided on the Vermillion Room for dinner. We had an amazingly attentive server who took very good care of us. The food was very good but the kitchen service was a bit slower than we would have preferred, but overall it was a nice evening.
Awesome experience at Vermillion. Highly recommend it.
Expected our dinners to be wonderful but fell short of that.
Server was good but took a long time to get our entrees. When the entrees arrived they were lukewarm…disappointing.
Wouldn’t recommend the vermilion to our friends.
I recently had dinner at The Vermillion Room with my Mom. The presentation of the food was memorable, in addition to great quality and flavor. Our server was very gracious, and pleasantly attentive to us even after we’d paid the bill. Thank you for a great dining experience!!

Good was good overall except the French onion soup. Very greasy and we couldn’t eat it. We mentioned it to the waiter and he didn’t do anything to make it better or discount the bill.
Every time I go to Banff, I come here. The food is outstanding, huge selection, and tastes fantastic.
First, this is not a negative review but...
we ate at the Vermillion Room last and walked away thinking it was an "okay" experience. We had come out from Edmonton specifically for dinner at the restaurant. We had drinks first at the Rundle Room and it was great. Tasty drinks and great service. Reservation time came so off we went. We had a great seat to look outside. Loved it. The server came and took our drink order except none of the non-alcoholic drinks were available except for the Ginger drink (amazingly good). We ordered a couple of French Onion Soups and charcuterie tray. We also ordered two orders of steak frites. The appetizers came quickly - so far so good. Then things took a turn. A couple of tables around us ordered apps and entrees. They ate and left while we still waited for our mains. The server finally came over to acknowledge that our order had not been forgotten but had good ol' "computer problems". Didn't stop our apps or the orders of those around us. Oh well, we weren't in a hurry but still a little disappointing. There was no real apology or anything to show there was concern on the part of the server or the restaurant. 90 minutes after we arrived, our steaks came out. They were amazing! Worth the wait? probably not but delicious nonetheless. I finished before my wife and yet my plate sat there unattended for a long period of time even though the server walked by several times including a stop to bring a refill of my pop. My wife finished and finally the plates were taken away. Dessert was ordered and came quickly - computer problems solved? We paid the bill and left. My issue with the dinner was not the food or even the service really. It was that dinner was nothing special. Including parking, drinks beforehand and dinner, the tab was $500. I walked away thinking it was no better than a dinner at the Keg. Not the extraordinary experience we were expecting. Fairmont can, and should, strive for better. 3 Stars.
Très mauvais serveur et j’ai commandé un steak frites à $53.00 , le steak était bon mais il était servi avec des frites congelées à la McDonald avec un petit récipient de ketchup Heinz…… sérieux , au Fairmont Banff spring a $500.00 la nuit, aucune classe, je ne recommande pas ce resto a personne
Amazing service!! Romantic evening celebrating our honeymoon. We received complimentary champagne and got a table with a view as requested. The server was professional and provided quick service. The food was also amazing

It was extremely busy due to two weddings taking place at the restaurant, but they still accommodated us and took good care. It was a little longer of a wait for food due to the weddings but our wonderful server kept the drinks coming and it was worth the wait.
This is a great place to eat if you want to treat yourself to a really nice buffet. Forget the cost, go with an empty stomach and enjoy!
We were greeted very pleasantly by the server on our arrival. Although a little early we were seated promptly. The table service was excellent. The food quality was not the greatest. Limited options and sometimes empty containers or cold food. Would not return for the price.
