It was extremely busy due to two weddings taking place at the restaurant, but they still accommodated us and took good care. It was a little longer of a wait for food due to the weddings but our wonderful server kept the drinks coming and it was worth the wait.
This is a great place to eat if you want to treat yourself to a really nice buffet. Forget the cost, go with an empty stomach and enjoy!
We were greeted very pleasantly by the server on our arrival. Although a little early we were seated promptly. The table service was excellent. The food quality was not the greatest. Limited options and sometimes empty containers or cold food. Would not return for the price.

Great food!! Our server Hugo was amazing and really helped up celebrate our 10th wedding anniversary on Saturday night. He was attentive and knowledgeable. We ordered the charcuterie, scallops, fish, and strawberry cheesecake for dessert and the entire meal was mouthwatering. Definitely recommend this restaurant for anyone wanting to celebrate a special occasion.
Great spot inside the Banff Springs, attentive service and high quality food - recommend the tartar, steak frites and French onion soup!
We had a table by the window with a beautiful view of the mountains. The food and service was very good. I had the strip loin steak and it was one of the best ever had.
My guest and I had dinner in the V room. Usually don’t go to places in hotels that also serve breakfast but decided to try it out. Couldn’t get into the chop house. Had asked on opentable for window table. Hostess said none available and they were first come/first serve basis and sat us in interior. I looked around and noted several window tables ready to seat someone. I asked to be moved and with a bit of an attitude she moved us to a table with exactly the dramatic view we were seeking. We had a waiter from Paris who didn’t seem too excited at first but we were eventually able to warm him up. I started with the beet salad and my guest got some oysters. My salad was best beet salad ever. Truly remarkable. The oysters were normal. My guest then had the halibut on a pea smear with lentils. She found the dish excellent. I got the prime rib. Asked for rare but they only had medium rare. It was ok but nothing special. No attention paid to developing a good crust. Meat more fatty than it should have been at that price. I was unimpressed. Ambiance not good unless you get a window table. The hotel gave us a dessert for our anniversary so we got the strawberry cheesecake. It was literally strawberry cheesecake not just topped with strawberry sauce. Very good. The server also brought us a couple of glasses of Niagara ice wine. Very nice final touch.

The service is excellent but the variety has the food and its quality can be better.
We used to love Sunday brunch here. Now, not so much. The food quality and assortment was horrible. No prime rib no seafood other than shrimp and mussels. A basic brunch buffet with cold food, and for more than $50/person.
Not worth the money.
There was a great deal of variety but overall the food quality was disappointing. Most of the food was cold (eggs benedict, pancakes, crepes, and bacon). We felt the the brunch was very overpriced for the quality of the food that was served. Although the hotel was amazing and service was great we would not return.

I’m sad to say that the vermillion room is not what I remember. It was so nice to finally feel human again and enjoy a Sunday brunch. I hate even writing this as we’ve had so many great brunches at the springs before. The Service wasn’t very good. I appreciate they were busy but the completely forgot our drinks and when they did come they were wrong. That wasn’t the worst part is that the food selection was very weak. The food we did have was good just not great. And at 170 dollars for 2 kids and 2 adults I was sadly disappointed. If that was our first experience at the hotel we would never return. I’m a devoted springs lover so will be back but I have to say we were sad upon leaving brunch.
Very limited variety, missing any vegetable we enjoyed last time(3 years ago). Too much money for very low value.
Food was good overall. Great available options, meal options great I.e. (breakfast, lunch and dinner). Desserts not as awesome, they were either to dry and or in some instances too sweet. Would return in regards to food.
Service was a huge let down, server took our order for drinks(only two people) returned in 5 min and said 'what did you order again'? We ordered 1 coffee and two orange juice. When she returned she brought two coffee and one orange juice, again we kindly reminded her of our order. 5 min later we finally got our drinks. Not once for the entire duration of our time did she return to our table and inquire if we would like any other drink or anything. During this time she was attentive to her other tables. After our meal we sat for a prolong period, even with trying to gain her attention. She eventually came to our table and we asked for the bill. Again she did not return to our table. We again had to get her attention and still no bill. I then asked the lady that was sitting guests if we could get our bill. She advised our server and she acted like she just forgot ( she put her finger up towards her head, gesturing she forgot) Only then did she finally return to our table and did not even acknowledge her inattentiveness.
I am not an individual that demands perfect service, I can appreciate when things get busy. However she was just completely inattentive, and when she was at our table she still brought wrong items.
I would expect better service for the cost of sitting.
We absolutely loved the Vermillion Room. The food was extremely delicious and fresh and the server (Niko) was super friendly and helpful. We will definitely dine here again.
Informed front check and waiter that ir was our anniversary and they said they would do something special and it never happened. Service was slow and food was mediocre. Short ribs sauce was rich, thick and too much. Scallops had only a few. Only good was the red wine.
Everything was really great. Our server was absolutely perfect. It was a really enjoyable night.

The kids entree took over an hour. It was horrible.
Our appetizers and main courses took a really long time to come out, which I don't mind so much as I was catching up with some old friends and my mother. We had the seafood platter, steak tartare and escargot for appies. The lobster was a bit tough, and the scallops were actually only half scallops that had been sliced horizontally. The escargot had not been seasoned at all... zero salt.
Mains were the filet Rossini, halibut, scallops and roast chicken with a side pasta. The steak was good and all the garnishes for the dishes were on point. Sauce for the steak had no truffle flavour to it, or evidence of a truffle ever being near it and the Madeira was barely noticeable. They had to replace our chicken with a short rib because they ran out. The short rib dish was actually really good though, so that wasn't a big deal since we were considering ordering it anyways. The scallop dish.... it had 3 little bitty 10-16 count scallops on it, that were overcooked, for $44... I felt I got more value out of the garnishes on that plate than the actual main focus of the dish... the scallops. The halibut was seriously under seasoned and cooked to the point of being dry.
Desserts were excellent. Creme brulee done in the classic French wide dish was great and the cheesecake was smooth and rich.
Our server was great and smoothed over the waiting situation and the switching our chicken to the short rib. Overall the food was seriously sub-par for a place such as the Banff Springs. I would not return to that particular dining outlet of the hotel.
Everything was great from food to service. It was my daughter's birthday and the server Melissa brought a dessert with a candle at the end of the meal. We sang "Happy Birthday", everyone around us was clapping and my daughter was so happy.

The buffet had a large selection and the food was tasty. I found the cost matched the value received. The service was fine overall.
One thing to note was Covid protocols were definitely light from my perspective and I think this is important to share, so guests can make an educated decision whether to venture out to The Vermillion Room.
While there was hand sanitizer stations and staff were masked, the restaurant was definitely busy with no mask mandates for guests. Each guest serves themselves from the buffet, using the same serving utensils and also opens and closes the serving dishes lids.
The buffet line moves quickly; however people are right behind each other with no social distancing.
I emailed the hotel and their response was they are following provincial health regulations, which I can appreciate, and mentioned they are doing extra cleaning.
During this sensitive time, If you have some anxiety about being around quite a few people and touching the same surfaces, you may wish to stay clear for a while.
Good food however not the best for value vs restaurants in Banff. Service was a tad slow at times.

Very lovely atmosphere and food for both brunch and dinner. My fiancé said it was the best grilled chicken he’s had and the vegan option with tofu and cauliflower had an amazing green sauce and was cooked to perfection. The cocktails were great as well as the service, we will definitely frequent here anytime we stay.
Service is ok, it’s toi espansive for quality of food
Overall a good experience. The steak options were a little pricey but thats normal for a higher end restaurant. Would 100% recommend to anyone
The ambience and service were wonderful. I have been going to the Banff Springs Hotel for 45 yrs. It truly is a gem in the Canadian Rockies and is a world class hotel experience. Its been about 5-6 yrs since I've had to Sunday brunch and was really looking forward to the experience with my family. As stated earlier, the atmosphere in the hotel is always amazing. The staff are courteous and helpful. The building is spotless, well maintained, and is truly a national treasure. However I was disappointed with the food that was offered at the buffet. It was all a pretty standard buffet and didn't seem to have nearly the variety, selection, and quality that I remembered. It had less to choose from than our local hotel back home. Overall the food was average, and almost twice the price of other comparable hotel buffets that I have experienced. Maybe I've been spoiled by the Spiral Restaurant at The Sofitel in Manila, which is one of the finest buffets in the world. But there is no reason why the Banff Springs Hotel can't put out a similar quality experience, with a view that can't be duplicated. Overall it was a fun experience at the Banff Springs, but its hard to recommend it to friends when you don't feel like you got good value.
The setting for this dining experience is one of the most beautiful I’ve ever seen. The staff were attentive, professional and very well mannered. The scenery surrounding the dining room is extraordinary. I must say though I was disappointed in the food. There were shortages at the carvery, pancakes and crêpes as well as bread to make your own toast. I found the flavouring to be below par and I definitely had higher expectations.
In saying this I do believe it is the setting that you are paying for. If you are going for the setting itself this is the place to be but if you are going with the expectations of a great tasting meal then I would go elsewhere.
