Vermilion is an upscale restaurant in downtown Boston, located inside the Winthrop Center. Led by Michelin-acclaimed Chef John Fraser, Vermilion redefines New England classics with a menu featuring premium cuts, seasonal vegetables, and bright coastal flavors.

Gather beneath teh Chihuly at 6 PM for cocktail hour, with passed bites and The Balvenie 14 Year Caribbean Cask. Then, at 6:45 PM, sit down to three courses from our chophouse kitchen, each built around the whisky: local scallops in brown butter beurre blanc with The Balvenie 12 Year, Long Island duck with cherry gastrque and the 16 Year French Oak, and our signature sticky toffee cake, soaked in Balvenie and served with the 21 Year PortWood. Wine pairings from Beverage Director Amy Racine round out every course. $125 per person, including all courses and pairings. Seating is limited.

Great food and service. 7:30pm reservations on a Saturday night. Odd feel due to it being very quiet (not busy) as its location is inside a residential/commercial building in the middle of Boston’s financial district. Also mildly overpriced. Would come back but maybe for a date night when you’re not looking for any type of vibe.

Service was timely and gracious but a little perfunctory. Food was outstanding... especially the starters. Not too pricey, and the spacious setting makes for a pleasantly quiet atmosphere.

We were visiting from California and tried Vermillion for the first time. Everything we ordered was phenomenal, with exception of the octopus appetizer which was a little too spicy (just preference). The branzino was probably the best I’ve ever had - skin perfectly crispy, nicely paired with grapefruit and farro, and just very flavorful. The prime rib was cooked just right (medium rare), enjoyed with a side of really creamy mashed potatoes. We ended the meal with the Dubai chocolate soufflé, which we would definitely get again. Service was attentive and pleasant.

Our experience up until we received our meal was exceptional. Initially our server was polite and engaged. Cocktails were great, appetizers-especially the caviar sandwiches were top notch. Unfortunately everything went downhill once we received our meal. It was brought to us by a staff member-which was fine. However-this is when our server and good service disappeared. Not one person asked if our meals were cooked to our liking, we would have loved another cocktail-but no one ever bothered to ask. We had to flag down a staff member to add a sauce to our filet mignon. We went a full 20 minutes AFTER we finished our meal before anyone bothered to ask if we wanted dessert. Again-our original server -nowhere to be found. I believe at this point management were assisting. Finally at the end of the meal-when payment was on the table-waiting to be collected- our server miraculously showed up. Horrible experience. And I can tell you- we were not the only people who felt that way. The couple in front of us had the same experience-they got smart and left right after their meal after being ignored most of the evening.
