We had the best dinner of the year this past Saturday night. From Natasha seating us to Ted walking us through each course the dinner was amazing. Excellent service. Food was out of this world. Highly recommend the four course option with delectable desserts...
Consistently wonderful for 14 years. Every year we come to Carlsbad we go here.
My expensive bone-in pork chop was uncooked in the center—literally uncooked. The server acknowledged the meat wasn’t cooked, and I returned it as a refused meal (I don’t return meals to the kitchen after a complaint—I don’t trust what might happen when I’m not watching). Later, I was charged for the meal, and I paid without protest. I also fully tipped the servers 22% for their polite care; even though I thought they should have deducted the near $50 bucks for the bleeding pork chop. So I’m protesting now by telling all my fellow business dinner sponsors, stay clear of Hyatt’s Vivace Restaurant. Not trustworthy for dining. Business-wise or otherwise.
I was excited about lobster risotto however it was bland and taste only tomato. New York steak and panda cotta were amazing!

The restaurant is very dated. No energy. Hasn’t changed a thing in 15+ years. Food was good but nothing to brag about. Vegetables were too spicy to eat which isn’t what you want when drinking a high end Italian wine. Peach salad was outstanding deserts were a 10. Everything else average. Waiter tried very very very hard and was nice. 4 courses is too much food. If you do eat here go with 3 or a la carte for 2 courses.
Everything was absolutely perfect!! Summer peach salad was delectable as was the corn panna cotta for dessert.
While in Carlsbad on business, Vivaci is a regular stop. Best of everything I want, ambiance, service, food and wine list. No better place to chill after a full week of business!
We dined at Vivace twice in one week. Each time it was a wonderful experience. Our first server was top notch explaining very thoroughly how each dish was prepared and recommending wine and her favorites on the menu. Service was impeccable, the food was creative and delicious and the outdoor ambience and view spectacular! If we are ever back in a Carlsbad, we will definitely return!
The presentation of the courses here, especially dessert, has gone up here! Love the donut and Black Forest cake presentation, and the server was very attentive

Really disappointed with this dining experience. I had requested a quiet table for a business dinner with associates. We are put in a room with two very large loud parties. We couldn’t even hear ourselves talk. A bad start. Next, I made a request that my food not be salty. I ordered the octopus. I received a very salty dish. They asked if I wanted something different I said no thank you. Then they brought me the same salty dish, again. The wait staff were very pleasant and tried to be very helpful and brought me two dinners, because they wanted me to be happy. Both entrées were fine. I learned later that the octopus is pre-marinated in salt. I should’ve been advise not to order it.
Anyway, I will not be coming back to this restaurant again. I couldn’t get over how incredibly loud the room was.

The food was very good but the service was super slow!
Vivace provided the perfect ambiance, service and food for a special evening. It was the opposite of the noisy and hurried environments in many restaurants. We were able to fully enjoy a relaxed and intimate dinner. Service was perfect with staff that are attentive without being pushy. The food was exceptional.
Food was good, waiter was a bit overly pushy in trying to get us to try specific dishes. Made it a little uncomfortable having to hear all about stuff, since we just wanted to order from menu and keep it simple. Food was good. Didnt celebrate our Anniversary any way for us even tho hostess mentioned she saw it was our anniversary. Most nice restaurants do something.
Food was amazing, employees took care of me and even when we were done they were ready to take the food for the next plate to come spot on and was great!

We had an outstanding experience. Erica and David were phenomenal and made our evening truly special. I know it takes a team to make this all happen. Thank you to the chefs and staff for the creative and delicious menu. We left fully and happy. We hope to be back sooner rather than later!
Splendid evening to celebrate our 38th Anniversary. Our first visit was everything that I had uncovered in my research. The combination of a subtly nuanced menu coupled with the superb depth of understanding of that complex menu by our server, Erica, put us in a position to fully explore Chef's creativity. We went with the five course menu option given the number of appetizers (two each with the five course menu) and were not disappointed.
Balancing the serving sizes depending on the overall amount of food is appreciated. Getting over-full on the early courses and not being able to fully enjoy the entree is an unfortunate occurrence in other restaurants/situations. I found the sizing was perfect and I never felt "under-served". From an elegant sufficiency perspective, I applaud the Kitchen's balanced approach.
Frankly, some reviewers have commented on the perceived high price of the menu. We found that the progression from three- to five- courses was actually a very economical approach (the steps were only $9 per step, while ala carte the appetizers would have been about 50% more).
Sitting near the fireplace, enjoying time to reminisce and faultless service (from Erica and the entire staff) were beyond compare. In summary, we'll be back when we want to be pampered.

Knowledgeable wait staff made the dinner very nice, but was surprised when the charcuterie plate was brought over with no explanation of what was on it. Also, their approach towards serving sparkling water is off ... hard to know how many bottles you are being charged for.
Food was terrific and atmosphere was nice. Actually prefer Vivace to the steakhouse at the hotel.
Presentations are all works of art at this restaurant. Devine!
Not one thing wrong with Vivace. From the excellent service to the delicious food they didn't miss a beat. The waitress was attentive but not overbearing and was able to answer all of our questions without hesitation. The food was not only delicious it was absolutely stunning to look at. The plating was some of the most beautiful and artistic I've seen. I would highly recommend this outstanding restaurant located in a lovely hotel.

ADON was one of the best waiters we have ever encountered, very professional yet friendly and very knowledgeable.
One strong suggestion. The dining room definitely needs white tablecloths to bring it up to the
look and feel of the restaurant. Bare tables seem like an attempt to save a few dollars and is not
in keeping with a four star establishment
Great dining experience—everything from straightforward comfort food to off the beaten path Italian delicacies.
My husband and I came here to celebrate our anniversary. We have never been here before but our friends highly recommended it. This restaurant did no disappoint. We both did the four course tasting menu and the portions were large. My husband ordered the rabbit appetizer, sourdough pasta with pork, and scallops. I had the shaved asparagus salad, mushroom agnolotti, and salmon. All of our dishes were unique and delicious! The service from our waitress Erica and the other waitstaff was also excellent. We felt special and ended the night with the little fried donuts and a caramel carrot type of pudding dessert. It was an amazing finish to our special night!
Everything was superb from the moment we walked through the doors until we left. We just love this restaurant. Kat and her team are just so attentive. And the food is so tasty and beautifully prepared. Adan, or server, is so knowledgeable and cannot do enough for us. For these reasons we come here on a regular basis. We really appreciate your service. Such a great neighborhood find so close to home. If you are looking for a wonderful dining experience for a special occasion or just because, Vivace is the place to go.
It's not cheap, but the food and ambiance are spectacular.
There was one exception that they could improve on, dessert. Too small for the price. Actually it would have been too small for half the price.

Good place for special occasion. The wine list a bit high but worth it. The tasting menu was great and we did try different dishes. We like to invite our family and close friends to this place.

Food wasn’t great.
The food was outstanding and so was the service. I just wish the obeonce was as good as it use to be when it was The Four Seasons. They had it nailed then. Even if they just dimmed the lights it would have helped. Again everything else was awesome.
Our exceptional dining experience started with incredible service from Erica. She walked us through the wine list and menu; her recommendations were spot on, especially the filet and lobster risotto. We finished our meal with some creativity wonderful sorbets.
