For more than five decades, Hanse Stube at Excelsior Hotel Ernst has combined culinary tradition with contemporary influences, making it one of Cologne’s most renowned gourmet restaurants. Maria Friedrich fillets and carves dishes, including traditional braised ox brisket, tableside on the classic silver service trolley.
