At its heart: a custom wood-fired robata and grill suite fueled by binchotan charcoal and local hardwood. One side handles yakitori and robata; the other, Santa Maria-style grilling. The menu is designed for sharing, from nigiri and sushi to skewers, steaks, and wood-fired vegetables. Desserts and cocktails are crafted with the same attention to detail, using authentic Japanese ingredients and seasonal flavors. Served on handmade Japanese plateware, every dish is a sensory experience, with theatrical presentations like the Smoking Bluefin Tuna.
