Two decades before Orchard opened in Verona, Deirdre Birmingham and John Biondi began work on a farm in the Driftless Area planting trees that, mostly, did not exist in this country.16,000 apple trees. Not eating apples. English and French cider varieties, certified organic. After20 years of improving drinks made from these apples, they built Orchard.Now drinks at Orchard trace back to the orchard in Mineral Point. The kitchen runs with the same patience as the farm. Chef Ian sources from the grower network Deirdre and John built before the restaurant.Friday fish fry is a weekly ritual. Brick-oven pizzas rotate seasonally. Saturday and Sunday brunch draws a crowd that lingers longer than planned. The patio fills early on warm evenings and is the best sunset seat in Verona.
