Three Tomatoesを取り戻すため、新しいアイデア、レシピ、素晴らしいワインを探し求め、長年イタリア全土を広く旅してきました。インスピレーションの源は、トラットリアスタイルの料理のシンプルで新鮮でヘルシーな地元の食材であり続けています。イタリアのトラットリアで食事をすることはイタリアの家族と一緒に食事をするようなものです。くつろいだ雰囲気の時も騒々しい時もありますが、常にフレンドリーです。自宅にいるようにくつろげる場所、仲間で集まる場所です。暖炉、煮込んだソースの香り、ロースト肉、焼き魚、特注の薪オーブンで焼いたピザがトラットリアのキッチンを温かく保ってきました。新しく改訂されたワインリストは、イタリア国際ワインコンクール（Vinitaly）やスローフードのテッラ・マードレへの参加から、かつ、イタリア本土、シチリア島、サルデーニャ島にわたるブドウ園の訪問からインスピレーションを得た価値のある優れたワインの選択によって一層充実したものとなっています。Three Tomatoesは、ワイン、料理、共生をトラットリア生活の重要な部分とする精神を持っています。
