George says. "It's been our dream to open our own place, to be creative with cuisine, and to have a family business that our sons can be a part of."
The Canal Bistro is that dream. "It's like you've come to one of our parties -- we've basically just moved our kitchen from home to here," they say. "We put the grill in the dining room because we want people to know that we are using top quality ingredients, and that freshness is our goal, so everything is done right in front of you."

But last night, with both of our wives out of town, I had a chance to enjoy it with a longtime friend. And by longtime, I mean we’ve known each other since we were kids — although calling him an “old friend” makes me realize that I’m old, too. We started with the bruschette and then settled into some serious Italian comfort food. He had the fettuccine Bolognese, while I went with the veal piccata, smashed redskin potatoes and sautéed green beans. Everything was fabulous. The food was terrific, but the best part of the evening was sitting across the table from a friend who has known me for a very long time and catching up. There’s something pretty great about spending a few hours with someone who has known you for years and picking up the conversation as if no time had passed. And, as always, Dave Butts took great care of us. The service was top-notch from beginning to end. Great food, great service and a wonderful evening with a longtime friend. Drinks were delicious (and strong), thanks to LJ, our bartender that evening. Our server, Bryce, was a pro. Didn’t rush us through. Gave recommendations when asked.
