SALTの哲学はシンプルです。最良の食は農場からテーブルまで最短距離を移動する、という信念です。よってメニューは季節ごとに変更し、地元で仕入れた食材を使用するべきで、それにヨーロッパの技法と革命的な志向を組み合わせることで、実に驚くべき体験を実現することができるのです。シェフのBradford Heapと彼のスタッフは、可能な限り地元の有機栽培の新鮮な食材を使用することに専念しています。メニューにはその考え方を反映したシンプルかつエレガントな美味しいものが並びます。ワインは世界各国から取り寄せたワインで、有名なワインのほかに新しいエキサイティングなレーベルも用意しています。禁酒法時代の前のカクテルにひねりを加えたドリンクも楽しめます。親しみやすいのに洗練された店で楽しいお食事を！

LingerはRoot Downのシェフ/オーナーのJustin Cucciが2番目にオープンしたレストランで、デンバーのローワーハイランズ地区に位置しています。Lingerの色鮮やかなメニューは、ファーム・トゥー・ストリートをコンセプトにした伝統的な各国のエスニック料理が中心で、再生利用したボックスカーのフロア、楕円形のレンガ、Lite Briteのバーカウンター、デンバーのダウンタウンの素晴らしい景色を望むインフィニティウィンドウなどを取り入れた意図的な矛盾とも呼べるデザインが特徴です。料理、サービス、ストーリーの絶妙な組み合わせがミックステープのように感情を引き出します。Lingerでは料理を改革しようとしているのではありません。もっとシンプルに、お気に入りの曲を聞いた時に感じるような気持ちを引き出せればと願っています。Lingerではランチも提供しています （火曜～金曜11:30～14:30）。

    My husband and I came to Linger for the first time the other night for a date and it was wonderful! Place was totally packed but got sat right away (made a reservation a couple nights before). Vibe was great. Service was quick and server was awesome (I believe her name was Lo). Foot was absolutely delicious!!! Wish we had room for more because we wanted to try everything!! The vegan options were awesome and im not even Vegan (husband is). Will totally be back next time we are in CO.

    Been going to Salt for over a decade. Never disappoints. This was a first date, I recommend seating in the cellar, quiet and intimate. Shared mussels, scallops, and a salad. Also split a steak with garlic mashers. All excellent. Ordered a bottle of wine from the by the glass menu and it was delicious.

    We dined in the time capsule and didn’t realize it was in an old bank vault! A very private table where we could look out at the main area in the restaurant. Our waitress was so funny and friendly, she definitely helped to make it such a good time. Everything tasted amazing and came out hot and flavorful. Definitely one of our new favorites 😊
